The problem with measuring by volume
A “cup” of flour can weigh anywhere from about 120 grams to 150 grams depending on whether it was sifted first, scooped directly from the bag and leveled, or spooned in loosely — a swing of roughly 25%, large enough to noticeably change how bread dough or cake batter behaves. Weight, by contrast, does not care how the ingredient was packed: 130 grams of flour is 130 grams of flour whether it is fluffy or compacted.
This inconsistency compounds across a recipe with multiple cup-measured ingredients. A recipe calling for 3 cups of flour could realistically deliver anywhere from 360 to 450 grams of actual flour depending on technique, while a recipe stated in grams removes that entire source of variation, which is why professional and serious home bakers overwhelmingly prefer scales.
Why professional bakers weigh everything
Bakeries measure in “baker’s percentages” — every ingredient expressed as a percentage of the total flour weight — a system that only works with weight-based measurement, since percentages of an inconsistent volume measurement would be meaningless. A typical bread dough might be 100% flour, 65% water, 2% salt, and 1% yeast, all by weight, which lets a baker scale a recipe from a single loaf to a thousand without any measurement drift.
Precision matters most for recipes with a tight ratio between ingredients — bread, where hydration percentage determines crumb texture; macarons, notoriously sensitive to almond flour and sugar ratios; and pastry, where the butter-to-flour ratio determines flakiness. Recipes that are more forgiving, like soups, stews, and most sautéed vegetables, tolerate volume measurement just fine, since a little extra onion rarely ruins dinner.
Grams vs ounces on a kitchen scale
Most digital kitchen scales switch between grams and ounces with a single button, and both units work fine for cooking — grams simply offer finer resolution for small quantities, since a scale reading in whole grams is more precise than one reading in fractions of an ounce, which matters for things like yeast, salt, or spices measured in single-digit amounts.
A useful reference: 1 ounce = 28.35 grams, so a recipe listing “4 oz butter” equals about 113 grams — conveniently close to one standard US stick of butter (113.4 g), which is why sticks and quarter-pound (4 oz) measurements line up so neatly in American baking.
When volume measurement is genuinely fine
Liquids measure far more consistently by volume than dry ingredients do, since a liquid always fills a measuring cup the same way regardless of technique — 1 cup of water is reliably 236.6 ml whether poured slowly or quickly, unlike flour, which compresses differently depending on how it is added. This is why most recipes still call for cups or milliliters of liquid even when they specify grams for dry ingredients.
For everyday cooking where an exact ratio matters less — a pot of soup, a stir-fry, most casseroles — volume measurement with standard cups and spoons is perfectly adequate, and switching everything to a scale would add effort without a meaningful improvement in the result. Save the scale for baking and any recipe where the author specifically provides gram measurements.
Choosing and using a kitchen scale
Look for a scale with at least 1-gram resolution — some cheaper models only show increments of 2 or 5 grams, too coarse for small quantities like yeast or baking powder — a tare/zero function to subtract the weight of a bowl before adding ingredients, and a maximum capacity of at least 5 kg for weighing larger batches of dough or a whole roasting chicken.
The tare function is what makes scale-based cooking fast in practice: place your empty mixing bowl on the scale, press tare to zero it out, add flour until the display reads your target weight, press tare again, add the next ingredient directly into the same bowl, and repeat — no separate measuring cups to wash, and no cumulative rounding error from measuring each ingredient in its own container.
Converting an existing cup-based recipe to weight
If you have a favorite recipe written in cups and want the consistency of weight measurement, standard reference weights exist for common baking ingredients: 1 cup all-purpose flour ≈ 120–125 g (spooned and leveled, the most accurate technique if you do not have a scale yet), 1 cup granulated sugar ≈ 200 g, 1 cup packed brown sugar ≈ 220 g, 1 cup butter ≈ 227 g (2 sticks), and 1 cup whole milk ≈ 240 g.
These reference weights assume a specific measuring technique — spooned into the cup, then leveled with a knife, never scooped directly from the bag and packed down — so results will vary somewhat from recipe to recipe and cook to cook, which is exactly the inconsistency a scale eliminates once you make the switch permanently.
Building the habit for the long run
Switching from cups to a scale feels slower for the first few recipes, mainly because you are looking up unfamiliar gram figures instead of grabbing a measuring cup on autopilot, but the habit becomes just as fast as volume measuring within a handful of bakes, and it stays accurate indefinitely afterward regardless of who is doing the baking or how tired they are.
A practical way to make the transition painless is to convert and write gram weights directly onto your favorite printed recipes or into your recipe app the first time you make them with a scale, so future attempts skip the lookup step entirely and you get the consistency benefit without any added friction after the first pass.
